Cake

  • 1 ½ cups brown sugar packed
  • 1/3 cup oil
  • 1 large egg
  • 1 cup buttermilk regular or low-fat ok
  • 1 teaspoon vanilla
  • 2 ½ cups all-purpose flour properly measured
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups peeled, cored, and chopped baking apples

Topping

  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter melted

Instructions

  1. Preheat oven to 325 F. Grease a 9x13-inch baking pan. Set aside.
  2. In a large bowl, stir brown sugar, oil, egg, buttermilk, and vanilla together until well-combined.
  3. Add the flour, baking soda, and salt. Stir just until incorporated.
  4. Fold in chopped apple.
  5. Pour the batter into the prepared pan.
  6. In a small bowl, stir sugar, cinnamon, and butter together.
  7. Sprinkle the cinnamon-sugar mixture over the batter.
  8. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.

Notes

  • Oil: Any neutral oil such as canola or vegetable will work.
  • Flour: To properly measure the flour, sift or stir the flour, lightly spoon into measuring cup, and level.
  • Apple: Apples such as Granny Smith, Jonagold, or Honeycrisp work well.
