  • 1 apple peeled, cored, seeded and diced (Honey Crisp, Gala, sweet variety
  • 1 1/2 tablespoons raw sugar
  • 1 tablespoon golden raisins
  • 1/4 teaspoon cinnamon
  • pinch nutmeg
  • 2 cups plain fat-free yogurt 0% fat, Stonyfield brand
  • 4 tablespoons walnuts chopped, or pecans

Instructions

  1. Place diced apple, sugar and raisins in a small pot, add 1/4 cup water, sprinkle with cinnamon, pinch of nutmeg, cover, and cook over low heat until soft, 16 to 18 minutes.
  2. Set aside to cool.
  3. Divide the yogurt in 2 medium bowls. Top with apples and chopped nuts. Serve immediately.

Notes

  • To prepare ahead, cook the apples mixture early and store it refrigerated separately from the yogurt and nuts.
  • Add the nuts and apple topping to the yogurt just before serving to keep the nuts crunchy and the yogurt fresh.
