Cinnamon Chip Cookies are soft cookies flavored with cinnamon chips and rolled twice in a cinnamon-sugar mixture to create a spicy-sweet crust. They have a tender, slightly chewy texture enhanced by cream of tartar and a balanced cinnamon flavor that permeates the dough and topping.

Description

This cookie dough combines softened butter with granulated sugar creamed until light and fluffy, then eggs and vanilla are mixed in before dry ingredients including flour, cream of tartar, baking soda, salt, and cinnamon chips are folded carefully. Some cinnamon chips are reserved for topping.

Dough balls are rolled twice in a cinnamon and sugar blend to coat thoroughly. Pressing down the balls before baking encourages a flatter cookie with a more even texture. Baking at 350°F for 9–11 minutes yields a cookie with golden edges and a soft center.

  • 1 cup butter softened, unsalted
  • 1 1/2 cups sugar
  • 2 large egg
  • 2 teaspoons vanilla
  • 2 3/4 cups flour
  • 1 1/2 teaspoons cream of tartar
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • (1) ounce bag cinnamon chips (reserve 2 Tablespoons for topping)

Cinnamon-Sugar Mixture:

  • 1/4 cup sugar
  • 1 1/2 Tablespoon cinnamon

Instructions

  1. Preheat oven to 350 degrees.In a large mixing bowl, cream butter and sugar for 4-5 minutes until light and fluffy.  Scrape the sides of the bowl and add the eggs and vanilla. Cream for 1-2 minutes longer.
  2. Stir in flour, cream of tartar, baking soda, and salt, just until combined. Add 1 cup of cinnamon chips to the cookie dough and stir together. Put aside remaining cinnamon chips for the topping.
  3. In a small bowl, stir together sugar and cinnamon. 
  4. If time allows, wrap the dough and let refrigerate for 20-30 minutes.
  5. Roll into small balls until round and smooth.  Drop into the cinnamon-sugar mixture and coat well. Using a spoon, coat for a second time, ensuring the cookie balls are completely covered. 
  6. *To make flatter cinnamon chip cookies, press down in the center of the ball before placing in the oven. This helps to keep them from puffing up in the middle. *Place on a parchment paper-lined baking sheet. Bake for 9-11 minutes.  Let cool for several minutes on baking sheet before removing from the pan.
  7. *Place on a parchment paper-lined baking sheet. Press remaining cinnamon chips onto the tops of the cookie dough balls. Bake for 9-11 minutes.  Let cool for several minutes on baking sheet before removing from the pan. If you have any extra cinnamon chips, lightly press them into the cookies as soon as they come out of the oven.

Notes

  • Cinnamon chips are available in baking aisles at many large retailers such as Target and Walmart.
  • Press cookies gently before baking to create a flatter, evenly baked cookie with less puffiness.
