Cinnamon Chocolate Pecan Pie Cookies
Description
The recipe uses pre-made deep dish pie shells rolled out to a large diameter, brushed with melted unsalted butter, then sprinkled with a mixture of cinnamon, brown sugar, and cocoa powder along with chopped pecans. The dough is rolled tightly, sliced into thin rounds, and baked until golden, creating a crisp cookie with layered spice and chocolate notes.
The cinnamon and cocoa combination enhances the flavor with warmth and slight bitterness balanced by brown sugar’s sweetness. The pecans add texture and a toasty nutty profile. The cookie’s thin slice and baking time allow for a crisp finish without being dry.
This recipe is practical for quick sweets using store-bought pie shells but can be adapted with homemade pastry or substitute nuts like walnuts. These cookies suit serving as a snack or dessert and are convenient to make in batches for sharing.
Ingredients
- 1 tablespoon cinnamon
- ½ cup brown sugar
- 2 tablespoon cocoa powder unsweetened
- 2 pie shell I used Tenderflake, deep dish
- ½ cup butter unsalted, melted, 1 stick
- 1 cup pecans chopped
Instructions
- Preheat oven to 375℉. Line a large baking sheet with parchment paper.
- Combine cinnamon, brown sugar and cocoa powder in a small bowl.
- On a floured surface, roll out each pie shell so that it's about 12 inches in diameter.
- Brush butter over pie crust, then sprinkle with half the cinnamon sugar over the entire surface. Sprinkle with half the chopped pecans then roll up the dough and cut into ½ inch pieces. Each pie shell should generate about 18 to 20 cookies, depending on how thick you cut them. Repeat with remaining pie shell and ingredients.
- Transfer slices onto the prepared baking sheet and bake for about 12 to 15 minutes or until golden.
Notes
- If using one pie shell instead of two, halve the cinnamon, brown sugar, cocoa powder, butter, and pecans accordingly.
- Homemade pie crust can be used in place of store-bought shells if preferred.
- Walnuts can substitute pecans for a different nutty flavor.
