Cinnamon Coffee Cake

This Cinnamon Coffee Cake features a moist sour cream–based batter layered with a spiced cinnamon sugar swirl and topped with a buttery cinnamon streusel. The sugar and cinnamon layers add a sweet, warm spice accent throughout the cake. The streusel topping provides a crisp, crumbly texture contrasting with the tender crumb underneath, making it ideal for breakfasts or snacks alongside coffee or tea.

Description

The cake combines melted butter and sour cream with sugars and eggs to create a rich, tender batter. Vanilla extract adds aromatic depth. The dry ingredients include all-purpose flour, baking powder, baking soda, and salt to ensure proper rise and texture.

A cinnamon sugar swirl is mixed separately and distributed in the batter, providing bursts of cinnamon flavor in the cake's center. The streusel topping is made from a mixture of flour, granulated and brown sugars, cinnamon, salt, and cold butter cut in until the mixture resembles small peas, forming a crumbly topping after baking.

The cake is baked in a round pan with sides high enough to contain the layering, resulting in a moist texture with a pronounced cinnamon flavor. This cake is traditionally enjoyed as a breakfast or brunch pastry, pairing well with coffee.

It can be prepared ahead, and the layering technique ensures cinnamon flavor is embedded within the cake, not just on top. Chilling the streusel mixture before baking helps maintain its crumbly texture.

Ingredients

Servings

Cinnamon Swirl

  • cup granulated sugar
  • 1 tablespoon ground cinnamon

Streusel Topping

  • cup all-purpose flour
  • ¼ cup granulated sugar
  • ¼ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons butter cold unsalted

Cake

  • ½ cup unsalted butter melted
  • 8 ounces sour cream
  • ½ cup granulated sugar
  • cup brown sugar packed
  • 2 egg large, room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and spray an 8-inch or 9-inch round cake pan with 2-inch high sides with pan spray. You may add a parchment round to the bottom of the pan and spray it with pan spray, but that is optional. Mix ⅓ cup granulated sugar and 1 tablespoon ground cinnamon evenly in a small bowl. Set aside.

Streusel Topping

  1. Add ⅔ cup all-purpose flour, ¼ cup granulated sugar, ¼ cup packed brown sugar, 1 teaspoon ground cinnamon, and ¼ teaspoon salt to a medium bowl and whisk to combine.
  2. Add the cold 6 tablespoons cold unsalted butter and use a pastry cutter to cut it into the flour mixture until the butter is the size of small peas. You may also use clean hands to rub the butter into the mixture by rubbing it between your fingers. Just be careful not to completely rub all the butter into the flour. Cover the bowl and set it in the refrigerator while you prepare the cake batter.

Cake

  1. Add ½ cup melted unsalted butter, 8 ounces sour cream, ½ cup granulated sugar, ⅓ cup packed brown sugar, 2 large room temperature eggs, and 2 teaspoons vanilla extract to a large bowl and whisk until smooth and combined.
  2. Whisk together 1 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, and ½ teaspoon baking soda in a separate bowl.
  3. Add the flour mixture to the sugar mixture and mix until combined.
  4. Add half of the cake batter to the prepared cake pan. Top it with the cinnamon sugar mixture.
  5. Add the rest of the cake batter on top of the cinnamon sugar and spread until smooth and even before distributing the streusel evenly over the top of the cake batter.
  6. Bake for 40-45 minutes, or until a toothpick comes out mostly clean from the center of the cake. Let the coffee cake cool completely before carefully turning it out of the baking pan. Slice into pieces and serve.
