Cinnamon Frosted Zucchini Bars

Cinnamon Frosted Zucchini Bars combine shredded zucchini and coconut into a tender, moist bar, topped with a sweet cinnamon frosting. Baking in a large jelly roll pan creates thin, easily shareable bars with a satisfying balance of subtle vegetable flavor and rich sweetness. These bars are great for serving at casual gatherings or as a snack that offers a hint of warmth from the cinnamon in the frosting.

Description

Cinnamon Frosted Zucchini Bars feature a batter made from all-purpose flour, baking powder, margarine, sugars, eggs, vanilla, shredded zucchini, and coconut. The zucchini adds moisture and a faint vegetable note, while the coconut contributes texture and flavor depth. After baking at 350 degrees for 30 minutes, the bars are cooled thoroughly before being topped with a smooth cinnamon frosting made from powdered sugar, milk, melted margarine, cinnamon, and vanilla.

The bars are sliced into 36 pieces, making them suitable for sharing. Their softness combined with the creamy cinnamon topping offers a pleasant contrast in texture, with the warmth of cinnamon complementing the subtle zucchini flavor.
