Cinnamon Oatmeal Apple Cookies

Cinnamon Oatmeal Apple Cookies blend soft oats, chopped apples, and warm cinnamon spices into tender, chewy cookies with crisp edges. The apples add a fresh fruity sweetness and moist texture, while cinnamon and brown sugar provide a gentle spice and caramel notes. These cookies offer a homestyle treat ideal for snack time, and their soft centers help balance the slight crunch from the oats.

Description

The Cinnamon Oatmeal Apple Cookies recipe mixes light brown sugar, melted butter, applesauce, vanilla, and chopped apples with rolled oats, flour, baking soda, cinnamon, and salt. Baking at 350°F produces cookies that are golden brown with crisp edges but remain soft and moist in the center, thanks to the applesauce and apple chunks.

The cinnamon provides a warm spice note that complements the natural sweetness of the apples, while the oats add texture and hearty chewiness. These cookies maintain moisture well, making them flavorful and enjoyable fresh from the oven.

Enjoy these cookies as a snack or dessert, especially when fresh apples are in season. They pair nicely with a cup of tea or coffee. It's best to eat them the day they are made, as the texture is most appealing then.

Ingredients

Servings
  • ½ cup light brown sugar packed
  • ¼ cup butter melted, unsalted
  • ¼ cup applesauce unsweetened
  • 1 teaspoon vanilla extract
  • 1 ¼ cup rolled oats
  • ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • ¾ cup apple chopped, Honeycrisp or Gala

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, stir together brown sugar, melted butter, applesauce, and vanilla. In another bowl, whisk together oats, flour, baking soda, cinnamon, and salt. Fold flour mixture into the sugar mixture just until combined. Fold in apple chunks.
  3. Divide the dough into 1 ½ tablespoon-sized balls using a spring-loaded scoop, about 1 inch apart, and flatten slightly. Bake for 10-12 minutes or until golden brown and dry around the edges but still soft in the center.
  4. Cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.

Notes

  • These cookies are best enjoyed the day they are baked for optimal texture and flavor.
  • Prepare only the quantity you plan to eat or share to avoid loss of freshness.
