Cinnamon Roll Apple Pie Cups (+VIDEO)

Cinnamon Roll Apple Pie Cups combine the soft, sweet flavors of cinnamon rolls with warm apple pie filling baked in a muffin tin, creating individual handheld pies. The cinnamon roll dough forms a tender, spiced cup that crisps slightly at the edges, while the filling offers familiar cinnamon-spiced apple fruitiness. These cups bake quickly to a golden finish and can be topped with icing or ice cream for a classic dessert experience in convenient single servings.

Description

This recipe uses refrigerated cinnamon rolls pressed into a greased muffin tin to create a pastry base. Flattening the dough slightly ensures it fits snugly into each cup, forming a shell with tender, buttery layers. The apple pie filling, ideally chopped into uniform half-inch cubes, is spooned into each cup to provide a moist and flavorful center.

Baking at 350°F for about 15 to 18 minutes allows the dough to bake through and develop a light golden color at the edges without burning. The result is a contrast between the soft cinnamon roll crust and the warm, sweet apple filling with its cinnamon and spice flavors.

The dessert can be drizzled with the cinnamon roll icing or served alongside ice cream for added richness. Preparation can also be done ahead of time, making these cups practical for gatherings or easy homemade treats.

Ingredients

Servings
  • baking spray nonstick
  • 2 cinnamon roll regular size, 16-18 oz each, refrigerated packages
  • 21 ounce apple pie filling canned
  • Ice cream optional for serving, or icing from cinnamon roll package

Instructions

  1. Preheat oven to 350°F/180°C.
  2. Spray a 12-cup standard muffin tin with nonstick baking spray.
  3. Open cinnamon rolls and flatten each one with a rolling pin (dust with flour if you find it too sticky.)
  4. Place the flattened cinnamon rolls into each muffin tin. Press gently into the muffin tin, and cut off extra around the edges.
  5. Fill each cup with apple pie filing. If your apple pieces are too big, make sure to cut them into 1/2-inch cubes.
  6. Bake for 15-18 minutes or until golden brown.
  7. Drizzle icing on top or serve with ice cream. (If you are not eating right away, wait until the pie cups cool before drizzling with icing.)

Notes

  • Use a rolling pin to flatten cinnamon rolls before pressing them in the muffin tin for an even cup shape.
  • If using larger cinnamon rolls, cut pieces to fit and use leftover dough to create additional cups.
  • Apple pieces in the filling should be cut to about 1/2-inch cubes for even baking and filling distribution.
  • These cups can be prepared a day in advance; add icing or ice cream just before serving for best texture.
