Cinnamon Roll Cake

The Cinnamon Roll Cake blends a soft cake base with a rich cinnamon-brown sugar swirl throughout, topped with smooth cream cheese frosting. The batter uses common baking ingredients while the cinnamon swirl mixture is gently folded in to create pockets of warmth and sweetness. Once baked, the cake is draped with a creamy frosting that melts slightly on the warm surface for added richness. This cake offers a textured balance between tender crumb and cinnamon sugar pockets, making it a comforting treat for breakfast or dessert.

Description

The Cinnamon Roll Cake combines typical cake ingredients such as flour, sugar, baking powder, and milk with a cinnamon swirl made from brown sugar, cinnamon, and butter. The batter is poured into a pan, then dotted with spoonfuls of the cinnamon mixture, which is swirled into the cake before baking. This creates a marbled effect of cinnamon sweetness inside the tender cake. After baking, a cream cheese frosting made with butter, cream cheese, powdered sugar, and vanilla is drizzled over the warm cake, enhancing its moistness and adding a tangy richness.

Baked in an 8x8 inch pan, this cake yields a moist yet fluffy texture with soft crumb and pockets of cinnamon sugar. It can be served warm to enjoy the slightly melted frosting or at room temperature. The cinnamon swirl adds a warm aromatic note and sweetness contrast within each bite.

For best results, consume the cake on the day it is made to prevent drying out. Leftovers can be stored in the refrigerator in an airtight container. The cake can be frozen with its frosting covered securely for up to three months and thawed overnight before serving. Reheating slices gently in the microwave can restore softness.

Ingredients

Servings

Cinnamon Roll Cake:

  • 1 1/2 cups all-purpose flour , or cake flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup butter , melted

Cinnamon Swirl:

  • 1/2 cup butter , softened
  • 1/2 cup light brown sugar
  • 1 Tablespoon all-purpose flour
  • 1 Tablespoon ground cinnamon

Cream Cheese Frosting:

  • 1 cup powdered sugar
  • 2 Tablespoons butter , softened
  • 4 ounces cream cheese
  • 1-2 Tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Grease an 8x8'' baking dish.
  2. Cake Batter: In a large bowl, combine the flour, sugar, baking powder, salt, milk, egg and vanilla. Stir in melted butter. Pour mixture into prepared pan and smooth into an even layer.
  3. Cinnamon Swirl: Combine 1/2 cup butter, 1/2 cup brown sugar, 1 Tablespoon flour, and 1 Tablespoon ground cinnamon, mixing until smooth.
  4. Swirl into cake: Drop small spoonfuls of the mixture evenly over the top of the cake batter. Use a knife to swirl through the cake and disperse the mixture throughout the cake batter.
  5. Bake 30-37 minutes or until a toothpick inserted in the center comes out clean. Drizzle cream cheese frosting over warm cake. Serve warm.
  6. Cream Cheese Frosting: Cream the butter and cream cheese together. Add powdered sugar, vanilla, and enough milk to make a smooth, soft frosting. Drizzle frosting over the cake with a spoon, or use a ziplock bag and snip a hole out of one of the corners to pipe the frosting on.
  7. Serve: This cake is best served warm from the oven, the same day it's made.

Notes

  • The cake is best enjoyed fresh; store leftovers in an airtight container in the refrigerator to maintain moisture.
  • To freeze, cover the frosted cake tightly with foil and freeze up to 3 months; thaw in the refrigerator overnight before serving.
  • Reheat individual slices gently in the microwave to restore warmth and soften the frosting if desired.
