Instructions
Step No.1: Preheat Oven
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step No.2: Mix Dry Ingredients
- In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and cinnamon.
Step No.3: Mix Wet Ingredients
- In another bowl, whisk milk, melted butter, eggs, and vanilla extract until smooth.
Step No.4: Combine Batter
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
Step No.5: Prepare Cinnamon Swirl
- In a small bowl, mix brown sugar, cinnamon, and melted butter until combined.
Step No.6: Layer and Swirl
- Fill each muffin cup halfway with batter. Spoon a small amount of the cinnamon swirl mixture into each cup, then top with the remaining batter. Use a toothpick to gently swirl the cinnamon into the batter.
Step No.7: Bake Until Golden
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let muffins cool for 5 minutes in the pan before transferring to a wire rack.
Step No.8: Drizzle with Glaze
- Whisk together powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the warm muffins before serving.
Notes
- Don’t Overmix: Overmixing the batter can lead to dense muffins. Mix just until combined.
- Use Room Temperature Ingredients: This helps create a smooth batter and even baking.
- Extra Swirl: For a more intense cinnamon swirl, double the cinnamon-sugar mixture.
- More Glaze: If you love extra sweetness, double the glaze for a thicker drizzle.
- Storage Tip: Store in an airtight container at room temperature for up to 3 days or freeze for longer freshness.
- Cream Cheese Cinnamon Muffins: Add a spoonful of sweetened cream cheese in the center before baking.
- Nutty Cinnamon Muffins: Stir in ½ cup chopped pecans or walnuts for extra crunch.
- Apple Cinnamon Muffins: Fold in ½ cup finely chopped apples for a fruity twist.
- Maple Glazed Muffins: Replace milk in the glaze with maple syrup for a warm, rich flavor.
- Pumpkin Spice Muffins: Swap ¼ cup of the milk with pumpkin puree and add ½ teaspoon nutmeg for a fall-inspired version.
