  • 2 tablespoons applesauce
  • 1 tablespoon vegetable oil
  • 1 tablespoon milk or buttermilk
  • ¼ teaspoon vanilla extract
  • 5 tablespoons all-purpose flour
  • 2 ½ tablespoons light brown sugar packed
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon baking powder
  • teaspoon ground nutmeg (optional)
  • teaspoon salt

Cream Cheese Icing

  • 2 tablespoons powdered sugar
  • 1 tablespoon cream cheese softened
  • 1 teaspoon milk

Instructions

Cinnamon Roll Mug Cake

  1. Add the applesauce, oil, milk, vanilla, flour, brown sugar, cinnamon, baking powder, nutmeg (if using), and salt to a 10 to 12-ounce mug.
  2. Mix everything together with a fork until combined and nearly smooth.
  3. Microwave on high power for 1 minute. Then, check the cake for doneness. If it's not fully cooked, microwave for an additional 15 seconds.

Cream Cheese Icing

  1. While the mug cake cooks, in a small bowl, mix the cream cheese, powdered sugar, and milk together with a fork until smooth.
  2. Transfer the icing to a Ziploc and cut a small corner off the bag.
  3. Take the mug cake out of the microwave and pipe the icing on in a spiral design. Serve warm.
