Cinnamon Streusel Baked Apples

Cinnamon Streusel Baked Apples feature halved apples hollowed and topped with a nutty, brown butter streusel made from oats, pecans, brown sugar, and warm spices. Baking softens the apples and toasts the streusel topping, resulting in a tender, sweet dessert with a crunchy, spiced crust. Serve warm with optional vanilla ice cream or salted caramel for added richness.

Description

This recipe starts by browning butter to develop a nutty aroma and amber color, then mixing it with brown sugar, flour, old-fashioned oats, chopped pecans, cinnamon, nutmeg, and salt to create a streusel topping. Apples, such as Honeycrisp or Granny Smith, are halved and cored to make room for the filling. The apples are arranged in a baking dish with hot water to encourage even cooking and prevent burning.

The streusel topping is spooned into the apple cavities, and the apples are baked at 375°F until tender and the topping is golden and crunchy. The resulting dessert balances tart and sweet apple flavors with the soft, spiced, and crunchy topping. The hot water in the baking dish keeps the apples moist and creates a warm environment for gentle baking.

These baked apples can be served as a comforting dessert on their own or enhanced with vanilla ice cream or salted caramel sauce for extra indulgence. The choice of apple variety influences the tartness and texture, allowing customization to taste preferences.

Ingredients

Servings

For the brown butter cinnamon streusel topping:

  • 8 tablespoons butter cut into tablespoon pieces
  • 1 teaspoon vanilla extract pure
  • 1/2 cup light brown sugar packed
  • 1/2 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup pecans or walnuts, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon salt

For the apples:

  • 5 honeycrisp apples can use Fuji, Jonagold, or Granny Smith, medium
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup water hot
  • vanilla ice cream for serving, optional
  • caramel sauce for serving, optional, salted

Instructions

  1. Preheat oven to 375 degrees F.
  2. Place butter pieces in a medium skillet. Melt the butter over medium heat, swirling it in the pan occasionally. The butter will foam and pop, so be careful. Continue to swirl the pan often. Remove pan from heat once the butter starts to brown and smells nutty. There will be small brown bits on the bottom. The butter should be an amber color. Pour butter into a medium bowl.
  3. Add the vanilla extract and brown sugar to the brown butter. Stir until smooth. Add the flour, oats, pecans, cinnamon, nutmeg, and salt. Stir until combined. Set aside.
  4. Cut the apples in half from stem to end. Use a melon baller or small spoon to scoop out the apple core and seeds. Dig deep enough so there is a little room to "stuff" the apples with the filling. Remove the apple stems.
  5. Pour the hot water in a large cast iron skillet or baking dish. Arrange the apples in the baking dish with the flesh facing up. Sprinkle brown sugar and cinnamon evenly over the apples. Divide the streusel topping between the apples, pressing down so it doesn't fall out.
  6. Cover the pan with aluminum foil and bake the apples for 20 minutes. Remove from the oven and carefully remove the foil. Bake for 30-40 more minutes or until the apples are soft and the topping is golden brown. You want the apples to be soft, but not mushy.
  7. Remove from the oven and serve warm with vanilla ice cream and salted caramel sauce, if desired.
