Description
These bars begin with melting butter over low heat then stirring in mini marshmallows until smooth. Vanilla extract and ground cinnamon mix into the melted marshmallows to add sweetness and warm spice. Most of the Cinnamon Toast Crunch cereal is folded into the mixture, which is transferred to a lined pan and spread evenly.
A final layer of cereal is pressed onto the top to add a textured, crunchy surface after cooling. The bars set at room temperature for about an hour, achieving a soft but structured chewy texture binding the cereal pieces together.
The bars are convenient snacks or desserts, offering a familiar cinnamon-sugar flavor from the cereal combined with marshmallow sweetness and buttery notes. They store well at room temperature or can be refrigerated or frozen for longer keeping.

Ingredients
- 4 tablespoons butter ½ stick, unsalted
- 3½ cups mini marshmallows
- 1 teaspoon vanilla extract pure
- ½ teaspoon ground cinnamon
- 5 cups Cinnamon Toast Crunch Cereal divided
Instructions
- Line an 8x8-inch baking pan with parchment paper. Set aside.
- In a large pot set over low heat, melt the butter.
- Add in the marshmallows and allow them to melt, stirring constantly until they are smooth, about 2-3 minutes.
- Remove from heat and stir in the vanilla, cinnamon, and 4 cups of cereal.
- Transfer the mixture to the prepared pan and spread it out to an even layer. Top with the remaining cup of cereal and press the bars down to pack them tightly-- be careful, they’re hot! If the mixture is sticking to your spatula, place another sheet of parchment paper on top and then press down on the bars through the parchment paper.
- Set them aside to cool to room temperature until set, about 1 hour.
- Slice and serve.
