Cinnamon Vanilla Ice Cream

Ingredients

  • 2 egg yolk
  • 1 cup granulated sugar allulose for sugar-free ice cream
  • 2 teaspoons cinnamon
  • 1 vanilla bean split in half, pod
  • 2 cups milk whole
  • 2 cups heavy cream

Instructions

  1. In a small bowl lightly beat egg yolk and set aside.
  2. In a medium saucepan, stir in sugar, 1 cup of the milk and add the eggs. Cook over low heat stirring frequently until is begins to thicken slightly. Whisk in all remaining ingredients; milk, cream, vanilla pod, cinnamon, and continue to cook until the ingredients coats the back of the spoon.
  3. Remove from heat and put in a container that the ingredients can cool in. Place plastic wrap directly on the mixture to prevent a film from forming. Chill in the refrigerator for 2 hours.
  4. Remove vanilla bean pod and pour cold mixture into prepared frozen ice cream insert and process according to manufacturer's directions.

Notes

  • Note, you can use 1 teaspoon of pure vanilla extract in place of the vanilla pod.
  • The vanilla pod can be simmered and churned with all the ingredients. Remove when you would like. I keep the pod until I serve to get all the vanilla flavor possible.
  • Macronutrient calculations are with granulated sugar.  This will change if you use a sugar-free alternative like allulose.
