Cinnamon Waffles

Light and fluffy cinnamon waffles with a touch of nutmeg make for a delicious change to your normal waffle breakfast!

Ingredients
- 2 cups all purpose flour
- 4 teaspoons baking powder
- 2 teaspoons ground cinnamon
- ⅛ teaspoon ground nutmeg
- ¼ cup white sugar
- 2 large eggs separated
- ¼ cup melted salted butter
- ¼ cup vegetable oil
- 2 cups milk
- 1½ teaspoons vanilla
Instructions
- Oil the top and bottom grids of the waffle iron with some vegetable oil then preheat to medium-high.
- Whisk together the dry ingredients in a large bowl.
- In a separate bowl, separate egg whites and beat until stiff peaks form.
- In a large 4-cup capacity liquid measuring glass, mix the egg yolks first, then add in the milk, butter, oil, and vanilla, and stir until completely combined.
- Add the egg mixture to the dry ingredients and mix well.
- Fold in the egg whites until just combined, trying not to over mix.
- Cook in the waffle iron on medium-high heat OR on the setting that says Belgian waffles/waffles for around 5-8 minutes. The waffles should be very golden brown on the outside.
- If needed, oil the waffle iron between waffles using a basting brush with oil.
- Serve topped with maple syrup, pear syrup, sliced fresh pears, or whipped topping!
Notes
- The recipe yield will depend on the size of the waffles that you make.
