Ingredients
Eggnog Waffles
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons light brown sugar
- 2 cups eggnog
- ⅓ cup vegetable oil
- 2 teaspoons vanilla extract
- 2 egg yolks
- 2 egg whites
Cinnamon Syrup
- 1 cup light brown sugar
- 1 teaspoon ground cinnamon
- 1 cup water
- 1 teaspoon cornstarch
- 2 tablespoons butter
- 1 teaspoon vanilla extract

Instructions
Eggnog Waffles
- Heat your waffle iron while preparing the batter. In a medium size bowl combine 2 cups all-purpose flour, 3 teaspoons baking powder, 1 teaspoon salt and 2 tablespoons light brown sugar. Stir together with a fork to mix.
- In a small mixing bowl combine 2 cups eggnog, ⅓ cup vegetable oil and 2 teaspoons vanilla extract. Separate the eggs adding 2 egg yolks to the eggnog ingredients and putting 2 egg whites into another small mixing bowl.
- Using a hand mixer beat the egg whites until stiff white peaks form. Add the eggnog ingredients to the flour ingredients. Stir together. Then fold in the egg whites.
- Spray your waffle iron with non stick cooking spray then cook the waffles according to your waffle makers instructions.
Cinnamon Syrup
- In a small saucepan add 1 cup light brown sugar and 1 teaspoon ground cinnamon. Stir together. Whisk together 1 cup water and 1 teaspoon cornstarch together, then pour into the saucepan. Heat over medium heat stirring occasionally 2-3 minutes until the mixture starts to bubble and is heated through.
- Once bubbling allow to cook for an additional 2-3 minutes while stirring. This will allow the mixture to thicken. Then remove from heat and add in 2 tablespoons butter and 1 teaspoon vanilla extract. Stir until the butter is melted. Allow the syrup to cool for several minutes prior to using. Can be used warm or cold.
