Citrus marinated grilled fish
Description
Citrus marinated grilled fish uses firm white fish fillets such as cod, halibut, or mahi mahi. The marinade combines sour orange juice or a mix of fresh orange and lime juice with oil and dry spices including chipotle powder, garlic powder, cumin seeds, oregano, and salt. This mixture both tenderizes and flavors the fish.
The marinated fillets are grilled until cooked but still moist, typically around 5 to 6 minutes on a preheated grill. The spice blend and citrus create a bright, slightly smoky, and mildly spicy flavor that complements the fish’s natural taste.
This grilled fish pairs nicely with toppings like citrus habanero salsa, avocado or guacamole, and pickled red onions. Serving it with tortillas or tostadas and sides such as Latin-style rice and fried ripe plantains rounds out a balanced meal with varied textures and flavors.
Leftover grilled fish can be repurposed quickly into an entree salad by layering salad greens, avocado, the fish, salsa, and a fresh lime drizzle for added brightness.
Ingredients
- 2 lbs White fish fillets can use cod, halibut, rockfish, mahi mahi, etc
For the citrus marinade:
- ¼ cup sour orange juice from 1 fruit (can replace with a mix of half fresh orange juice and half lime juice, also called naranja agria
- ½ tablespoon of oil
- 1 teaspoon sour orange zest or regular orange zest
- 1 teaspoon chipotle powder or your favorite chili powder, adjust to taste - use paprika for non-spicy variation, ground
- 2 teaspoons garlic powder
- 1 tablespoon cumin seeds whole
- 1 teaspoon oregano dry
- 1 teaspoon salt
Toppings and side dish suggestions:
- tortillas or tostadas
- citrus habanero salsa
- avocado homemade guacamole or slices
- rice Latin style
- plantains fried, ripe
- pickled red onions called cebollas encurtidas or lime pickled
Instructions
- Mix the dry spices and seasonings with the sour orange juice and oil.
- Rub the fish fillets with the citrus marinade and let marinate for at least 30 minutes.
- Pre-heat the grill, for the indoor grill, I usually heat it to max/searing temperature.
- Grill the fish to desired doneness. The exact time will vary based on your grill and the thickness of the fish fillets. For the indoor grill, it usually takes 5-6 minutes for the fish to be cooked but still moist.
- Serve the grilled citrus fish with your choice of toppings and side dishes.
Notes
- Leftover grilled fish works well in a quick salad with greens, avocado slices, habanero salsa, and a drizzle of fresh lime and olive oil.
