Classic Blackberry Crumble

Classic Blackberry Crumble features a warm, bubbling blackberry filling topped with a cinnamon-spiced oat and flour crumble baked until golden. The cold butter cut into the topping adds a flaky texture contrasting the juicy berries beneath. Serving with vanilla ice cream adds a cold creamy element, complementing the warm dessert.

Description

This recipe begins by placing a greased cast iron skillet in a hot oven to preheat, ensuring even baking and a crisp crust. Blackberries are tossed with sugar, cornstarch, and water to create a thickened filling that thickens during baking. The filling is poured into the greased skillet. A topping is made from quick-cooking oats, brown sugar, flour, cinnamon, and cold butter that is cut in until crumbly. The topping is sprinkled evenly over the berries before baking at 375°F until the filling is bubbly and the topping turns golden brown. Cooling briefly before serving allows the filling to set slightly. Vanilla ice cream is an optional accompaniment that compliments the warm fruit and crumb.

  • 2 teaspoons cornstarch
  • 1 tablespoon water

Topping

  • 1 cup oats quick-cooking
  • ½ cup light brown sugar firmly packed
  • ½ cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup butter cut into small cubes, cold
  • vanilla ice cream for serving (optional)

Instructions

  1. Preheat the oven to 375 degrees F. Place a 10-inch cast iron skillet in the oven while it's heating. Once the oven is hot, take out the skillet and carefully grease the inside with butter. Set aside.
  2. To a medium mixing bowl, add the blackberries, granulated sugar, cornstarch, and water. Gently mix until the berries are coated.
  3. Pour the blackberry mixture into the greased skillet. Set aside.
  4. In a medium mixing bowl, combine the oats, brown sugar, flour, and cinnamon.
  5. Using a fork or pastry cutter, cut the cold butter into the oat mixture until it has a small crumbly texture. Sprinkle the topping evenly over the berries.
  6. Bake for 25 to 30 minutes or until the filling is bubbly and the topping is golden.
  7. Remove from the oven and let rest for 5 minutes before serving. Top with vanilla ice cream if desired.
