Classic Chocolate Mint Brownies

Classic Chocolate Mint Brownies combine a rich, dense chocolate base with a cool mint frosting and a smooth chocolate ganache topping. The layers provide a balance of fudgy texture and refreshing mint flavor, enhanced by a subtle green hue if food coloring is used. This dessert is suitable for gatherings or a special treat, offering an elevated twist on traditional brownies by adding a creamy mint layer and a luxurious finish.

Description

The recipe for Classic Chocolate Mint Brownies starts with a fudgy brownie base made from butter, cocoa powder, sugar, honey, eggs, and leavening agents, baked until just set. After cooling, a mint layer is spread over the brownies, combining powdered sugar, melted butter, milk, and mint extract, which imparts the distinctive mint flavor and creamy texture. Optionally, green food coloring can be added to enhance the appearance. The final touch is a chocolate ganache made with semisweet chocolate chips, heavy cream, butter, and mint extract, poured over the mint layer and chilled to set.

The contrast between the dense chocolate base, the sweet, creamy mint layer, and the glossy ganache creates a multi-textured treat with a refreshing undertone. The layered assembly requires cooling between steps to ensure clean layers and a stable finish. These brownies are ideal for serving as a dessert at gatherings or holiday celebrations where a mint-chocolate combination is appreciated.

For a stronger mint presence, doubling the mint frosting layer is suggested, adding more of the cooling mint character. The brownies should be refrigerated after assembly to allow the layers to firm up for easier slicing and serving.

Ingredients

Servings

Brownies:

  • 10 tablespoons butter salted
  • ½ cup cocoa powder unsweetened
  • 1 ½ cups granulated sugar
  • ¼ cup honey
  • 4 large egg
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt

Mint Layer:

  • 2 cups powdered sugar
  • ¼ cup butter melted, salted
  • 2 tablespoons milk
  • 1 teaspoon mint extract
  • 2 drops green food coloring optional

Chocolate Ganache:

  • 1 cup semisweet chocolate chips
  • ¼ cup heavy cream
  • 2 tablespoons butter
  • ¼ teaspoon mint extract

Instructions

  1. For the brownies, preheat the oven to 350 degrees F and lightly grease a 9X13-inch baking pan with cooking spray. (If using a glass baking pan instead of aluminum, decrease the baking temperature to 325 degrees F.)
  2. In a microwave safe bowl or in a saucepan on the stove, melt the butter. Stir in the cocoa, sugar and honey. Let cool to room temperature. Whisk in the eggs, one at a time. Stir in the flour, baking powder and salt and mix until combined.
  3. Spread the batter in the prepared pan and bake for 20-25 minutes. Cool completely in the pan.
  4. For the mint layer, whisk together the powdered sugar, butter, milk, mint extract and food coloring (if using) until smooth and creamy. Spread evenly over the top of the cooled brownies. Refrigerate for 15-20 minutes.
  5. For the ganache, heat the cream and butter until just barely simmering. Pour over the chocolate chips and stir until smooth and glossy. Stir in the mint extract. Spread the ganache evenly over the mint layer. Refrigerate for an hour or so until the chocolate layer has set.
  6. Cut into squares and serve. These taste best chilled in my humble opinion.

Notes

  • Consider increasing the mint frosting amount to heighten the mint flavor and creaminess.
