Classic Key Lime Pie

Ingredients

Graham cracker crust

  • 1 1/2 cups graham cracker crumbs from about 13 whole (rectangle) graham crackers
  • 3 Tbsp granulated sugar
  • 6 Tbsp butter melted, unsalted

Key lime pie filling

  • 2 (14 oz each) sweetened condensed milk cans
  • 2 large egg yolk
  • 1/2 cup sour cream full fat is recommended
  • 3/4 cup lime juice can be substituted with regular lime juice, fresh, key lime
  • 2 tsp key lime zest
  • 1/8 tsp kosher salt

Garnishes

  • lime zest additional
  • lime key lime, slices
  • Whipped Cream

Instructions

Prepare

  1. Preheat oven to 350°F. Set out a 9" pie pan/pie dish.

Make crust

  1. Combine crust ingredients (graham cracker crumbs, sugar, and butter) in a mixing bowl and stir to combine well.
  2. Transfer mixture to 9” pie pan and press evenly into the bottom and sides of pan.
  3. Bake the crust for 9 minutes, then set aside.

Make filling

  1. While crust is baking, make the pie filling by adding the sweetened condensed milk, egg yolks, sour cream, key lime juice, lime zest, and salt to a mixing bowl.
  2. Use hand mixer to beat together for about 2 minutes, scraping the sides of the bowl as needed.
  3. Tap bowl gently on a counter a couple of times to release any air bubbles from the mixing.
  4. Pour filling into baked crust, spreading into an even layer.

Bake

  1. Bake in the 350°F oven for 15-20 minutes, until the center is just slightly jiggly when nudged, then remove and let sit at room temperature to cool completely.

Chill

  1. Once cooled, cover loosely with plastic wrap and refrigerate at least 2-3 hours, or up to overnight.

Serve

  1. To serve, add swirls of whipped cream around the outside edge of the pie, and sprinkle the whipped cream with a bit of lime zest, with halved key lime slices arranged in a fan shape in the center of the pie.

Notes

  • Recipe makes one 9" pie, with the suggested serving being 1/8th of the pie.
  • I highly recommend using freshly squeezed lime juice for this recipe.
  • If key limes aren't available, you can substitute with regular limes.
