Classic Oatmeal Chocolate Chip Cookies
Description
The Classic Oatmeal Chocolate Chip Cookies recipe uses a combination of softened butter and sugars creamed together to create a light, fluffy base. The addition of eggs and vanilla enhances the richness and flavor. Incorporating both baking soda and baking powder with salt supports a gentle rise and texture. Including rolled oats provides chewiness, while chocolate chips or chunks add pockets of melted chocolate throughout the cookies.
The cookies are portioned with approximately 2 tablespoons of dough each and baked at 350°F for about 9-11 minutes, resulting in a lightly browned edge and soft center. Variations in oats allow for adjusting texture, from more rustic to tender. Adjusting sugar quantity can make the cookies less sweet without compromising texture.
This cookie recipe is suitable for baking in batches and can be modified by using different spices or chip varieties. It provides a classic sweet treat notable for its balance between the wholesome texture of oats and the richness of chocolate.
Ingredients
- 1 cup butter softened to room temperature
- 1 cup light brown sugar packed (see note
- 1 cup granulated sugar
- 2 egg large
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups all-purpose flour
- 2 ½ cups rolled oats old-fashioned, see note
- 2 cups chocolate chips or chocolate chunks (butterscotch chips are delicious, too
Instructions
- Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper, silicone liners or lightly grease with cooking spray.
- In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with a handheld mixer, cream together the butter and sugars until light and fluffy, 1-2 minutes. Add eggs and vanilla and beat until creamy and well-combined, 1-2 minutes. Add baking soda, baking powder, salt and mix well. Add flour, oatmeal and chocolate chips. Mix until no dry streaks remain (don't go crazy; just mix until evenly combined).
- Scoop the cookies into balls (about 2 tablespoons each) and place a couple inches apart on the baking sheets.
- Bake at 350 degrees for 9-11 minutes.
Notes
- Using a mix of old-fashioned and quick oats can affect cookie density and texture; full old-fashioned oats make chewier cookies, while quick oats create a denser, puffier cookie.
- You can reduce the sugar to 3/4 cup each for brown and granulated sugars to cut sweetness without affecting the cookie's structure.
- If cookies spread too much during baking, try increasing the oven temperature to 375°F or using convection baking at 325°F for better shape retention.
