  • 6 cups chicken or vegetable broth
  • 1 ham bone or 2 cups diced ham (optional)
  • 1 bay leaf 
  • 1 teaspoon dried thyme
  • salt and black pepper to taste

Instructions

  1. Prepare Ingredients: Rinse the split peas under cold water and set aside. Dice the onion, carrots, and celery.
  2. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
  3. Add Ingredients: Add the split peas, broth, ham bone (if using), bay leaf, and thyme. Stir to combine.
  4. Simmer Soup: Bring to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.
  5. Adjust Seasoning: Remove the ham bone and bay leaf. Shred any meat from the bone and return to the soup. Season with salt and pepper to taste.
