Ingredients
- 1 lb dried split peas, rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups chicken or vegetable broth
- 1 ham bone or 2 cups diced ham (optional)
- 1 bay leaf
- 1 teaspoon dried thyme
- salt and black pepper to taste
Instructions
- Prepare Ingredients: Rinse the split peas under cold water and set aside. Dice the onion, carrots, and celery.
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Sauté onion, carrots, celery, and garlic until softened, about 5 minutes.
- Add Ingredients: Add the split peas, broth, ham bone (if using), bay leaf, and thyme. Stir to combine.
- Simmer Soup: Bring to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.
- Adjust Seasoning: Remove the ham bone and bay leaf. Shred any meat from the bone and return to the soup. Season with salt and pepper to taste.
- Blend (Optional): For a smoother texture, use an immersion blender to blend part of the soup, leaving some chunks for texture.
- Serve: Ladle into bowls, garnish as desired, and enjoy!
Notes
- Make Ahead: Split pea soup tastes even better the next day. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
- Customizing the Flavor: For a smoky flavor, use smoked ham or add smoked paprika. For a vegetarian option, skip the ham and add extra vegetables like potatoes or zucchini.
- Serving Suggestions: Serve warm with crusty bread or a side salad. Garnish with fresh parsley, croutons, or a dollop of sour cream.
- Storage Tips: Let the soup cool before storing in an airtight container. Reheat gently on the stove or in the microwave, adding water if it thickens too much.
