Cloud Biscuits

Cloud Biscuits are tender, lightly sweetened biscuits made from a basic dough of flour, sugar, baking powder, salt, shortening, milk, and egg. Their soft texture and golden color make them a comforting bread ideal for breakfast or a side.

Description

Cloud Biscuits combine 2 cups all-purpose flour with sugar, baking powder, and salt, cut with shortening to create a flaky texture. The dough is moistened with a mixture of whole milk and a large egg, stirred until just blended, and allowed to rest briefly. After resting, the dough is floured on top, gently shaped into a disk, and cut into 2-inch rounds.

Baked at 450°F on an ungreased baking sheet, these biscuits develop a golden crust while maintaining a soft crumb interior. The recipe’s technique of cutting in shortening by hand preserves small pieces of fat that melt in baking to create a light biscuit texture. The dough consistency is just firm enough to hold shape for cutting rounds.

Cloud Biscuits are suitable as a breakfast bread, alongside soups or stews, or as a base for toppings like butter or jam. Their modest sweetness and tender bite highlight their versatility with both savory and sweet accompaniments.

Ingredients

Servings
  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup shortening
  • ¾ cup milk whole
  • 1 egg large

Instructions

  1. Preheat oven to 450F. Position the rack in the upper third of the oven.
  2. Stir together the flour, sugar, baking powder, and salt in a large bowl. Cut the shortening with your hands and mix it with the flour mixture, leaving some small lumps intact.
  3. In another small bowl whisk together the milk and egg and add it to the dry ingredients all at once. Using a fork stir the dough together until it separates from the bowl walls and follows the fork around the bowl. Let the dough stand for 10 minutes, then transfer the dough to a heavy flowered work surface and dust the top of the dough well with flour. Pat the dough gently into a ¾ inch thick disk. Cut into a 2-inch round.
  4. Bake the biscuits on an ungreased baking sheet until golden, 12 to 15 minutes.
