Cobbler Recipe With Plums and Rhubarb

 A healthy spin on the classic cobbler recipe with plums and rhubarb, that is even gluten free! Quick and easy, delicious and healthy!

Ingredients

Servings
  • 2 plum quartered, small, golden variety
  • 1/4 Cup rhubarb thinly sliced
  • 1/2 Tbsp sucralose sweetener
  • 1 Tbsp honey
  • 1 Tbsp coconut oil chilled
  • 2 Tbsp oats
  • 1 Tbsp buckwheat flour
  • 1 Tbsp coconut flour
  • 1/4 tsp cinnamon
  • 1 Tbsp brown sugar

Instructions

  1. Preheat oven to 400 degrees.
  2. Cut up the plum and place cut side down into a small cast iron skillet.
  3. Sprinkle the plums with 1/2 Tbsp Splenda
  4. Slice the rhubarb and place them on top of the plums.
  5. Drizzle the 1 Tbsp honey on top of a fruit and set aside.
  6. In a small bowl, combine the oats, flours, cinnamon and brown sugar.
  7. Chop the the 1 Tbsp chilled coconut oil into small cubes and blend into the flour mixture with a pastry blender or your fingers.
  8. Combine until the pieces are blended in and the mixture has turned into small crumbs.
  9. Place the crumbs on top of the fruit.
  10. Bake for 30-355 minutes and then turn your oven to High broil and cook 3 minutes more, until golden brown.
  11. Yum Yum Yum! Especially served with some vanilla frozen yogurt!

Notes

  • This is equally as delicious with whole wheat pastry flour if you aren't concerned about gluten free!
