  • 1 teaspoon vanilla extract

Coca Cola Icing

  • 1/2 cup butter
  • 1/4 cup cocoa powder unsweetened
  • 1/3 cup cola soft drink
  • 3 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup pecans chopped

Instructions

  1. Preheat oven to 350 F. Grease a 9x13-inch baking pan. Set aside.
  2. Combine butter, cocoa powder, and cola in a medium saucepan over medium heat, stirring until butter melts.
  3. Stir in marshmallow, and heat until mostly melted.
  4. Remove from heat.
  5. Stir in flour, sugar, and baking soda.
  6. Add eggs, and stir until blended.
  7. Stir in buttermilk, Greek yogurt, and vanilla.
  8. Pour into prepared baking pan.
  9. Bake for 20-30 minutes, or until a pick inserted in center comes out clean.
  10. Make the icing during the last 10 minutes of baking.
  11. To make the frosting, combine butter, cocoa, and cola in a medium saucepan over medium heat, stirring until butter melts.
  12. Remove from heat, and stir in powdered sugar, vanilla, and pecans.
  13. Remove cake from oven, and carefully pour icing over warm cake.

Notes

  • Use nearly a full 12-ounce bottle of regular Coca Cola; diet versions are not recommended.
  • If Greek yogurt is unavailable, replace it with additional buttermilk up to 3/4 cup total.
  • The cake improves in flavor after resting for at least an hour, making it ideal to prepare ahead.
