Coca Cola Cake
Description
Coca Cola Cake blends the acidity and sweetness of cola with cocoa powder and butter to create a moist, tender chocolate base. Miniature marshmallows mixed into the batter soften and partially melt during baking, adding texture and sweetness. The batter is enriched with buttermilk, Greek yogurt, vanilla extract, and eggs to balance moisture and enhance flavor.
The cake bakes in a 9x13-inch pan and is topped with a frosting made from the same cola and cocoa mixture combined with powdered sugar and chopped pecans. The icing is poured warm over the hot cake, creating a glossy, nut-studded topping that seeps into the crumb slightly.
For best results, the recipe recommends using regular cola rather than diet, and letting the cake sit at least an hour before serving to allow flavors to meld. Variations include substituting yogurt or buttermilk as needed. The cake is well-suited for sharing and casual celebrations.
