Description
This recipe involves making shallow cuts in chicken wings to help flavor penetration, then briefly boiling them to reduce any undesirable taste. The wings are pan-fried in oil until lightly browned, which forms a crispy surface that enhances texture and taste. Afterwards, Coca-Cola is added along with slices of fresh ginger, chopped scallions, and seasonings including soy and oyster sauces for depth.
The wings simmer in the liquid for about 20 minutes total, initially over gentle heat and then over higher heat to reduce and coat the chicken thoroughly with the sauce. During cooking, ginger and scallions are periodically removed to avoid overpowering bitterness. The result is wings with a sticky, flavorful glaze that balances sweet, savory, and aromatic notes.

Ingredients
- 500 g chicken wings ,around 12 to 14 middle wings
- 600 ml Coca-Cola
- 1 ginger large piece
- 4 scallions ,divided
- 1/2 tbsp. neutral cooking oil generic cooking oil
- salt a small pinch
- 1 tbsp. soy sauce optional for a mild spicy version, light
- 1 tsp. oyster sauce
Instructions
- Make some cuts on the back of the chicken wings, making the flavors better absorbing.
- Add the chicken wings to cold water and cookign wine. Cook for about 1 minute after boiling. This is optional, but it helps to remove the odd taste further.
- Add about 1/2 tablespoon of cooking oil to a pan and fry the chicken wings until slightly browned. This step is a must. Browned and crispy surface brings lots of flavors.
- Add coca cola in with allions and several slices of ginger. Then season with a very small pinch of salt, light soy sauce and oyster sauce.
- Add the cola to the chicken wings. Simmer for 10 minutes, then turn up the fire and cook for another 10 minutes. During this process, pick up ginger and scallion and remove the floats on the surface.
- Cook until all the sauce is coated on the chicken wings. Serve hot!
