Coca-Cola Rice

This delicious latin rice made with coca cola is topped with raisins and toasted almonds. Great and easy side dish to any meal.

Ingredients
- 1 Cup long grain rice
- 1/4 Cup egg noodles the ones used for soup
- 1/2 Cup almonds toasted, sliced or slivered
- 1/2 Cup raisins
- 1 Cup cola 8 oz, Coke brand
- 1 1/4 Cups water
- 1 bouillon cube
- 1 Teaspoon vegetable oil or more if needed
- salt to taste
- black pepper to taste
- green onion sliced (to garnish)
Instructions
- In a heavy saucepan, add the oil to medium heat
- Add the noodles and cook until they soften and get toasted (don't let them burn). Stir often
- Add the rice and mix with the noodles
- Pour in the coke, water and bullion cube. Let the liquid come to a boil. Test the liquid for seasoning and make the necessary corrections.
- Place a lid on top and reduce the heat down to low. Cook for 10-15 minutes or until the liquid has evaporated
- Remove from heat, fluff with a fork
- Mix in the raisins and almonds
- Garnish with the green onion
- Enjoy!
