Coconut Ball Recipe

This Coconut Ball Recipe blends sweetened condensed milk with unsweetened coconut flakes to form moist, chewy clusters. Each ball centers around a pecan half, adding a crunchy contrast, and is rolled in additional coconut flakes for extra texture. The lightly sweetened and vanilla-scented treats are bite-sized and easy to handle, making them suitable as finger snacks or simple desserts.

Description

The recipe yields bite-sized coconut balls made by mixing sweetened condensed milk with coconut flakes, powdered sugar, vanilla extract, and a pinch of salt to balance sweetness. The mixture is dense enough to be shaped around whole pecan halves, incorporating a nutty crunch. Rolling the formed balls in reserved coconut flakes adds a snowy, textured coating.

These treats deliver a chewy, moist mouthfeel with a subtle vanilla undertone and a sweet yet balanced flavor. The pecans inside introduce a gentle crunch that complements the softness of the coconut mixture. The recipe also provides flexibility to adjust ball size, resulting in approximately 20 to 30 pieces depending on the scoop size used.

They are easy to prepare without baking, making them convenient for a quick homemade snack or dessert at any time. The combination of simple ingredients and forming technique produces a consistent, satisfying texture and flavor.

Ingredients

Servings
  • 14 ounces coconut flakes divided, unsweetened
  • 14 ounces sweetened condensed milk
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt fine sea salt
  • 20 pecan halves

Instructions

  1. Set aside 1/2 cup of the coconut flakes.
  2. In a medium mixing bowl, stir together the sweetened condensed milk, powdered sugar, vanilla and salt. Fold in the remaining coconut flakes. This process is more of a pack and press with a spatula or spoon, than stirring.
  3. Use a 1 1/2 tablespoon cookie scoop and scoop out the coconut mixture. Using your hands, use a pecan as the center and form the coconut mixture around the pecan, rolling and packing.
  4. Roll the formed ball in the coconut flakes set aside.
  5. Repeat with remaining coconut mixture, making approximately 20-30 coconut balls (depending on size).
