Coconut Bars

Coconut Bars are baked treats featuring a base of sugar cookie dough topped with a creamy mixture of whipped cream cheese, sugar, egg, coconut extract, lime zest, and shredded sweetened coconut. After baking until set and lightly toasted, the bars are chilled and cut into portions, offering a rich, tangy, and sweet dessert with coconut and citrus aroma and a chewy texture from the coconut topping.

Description

This Coconut Bars recipe uses refrigerated sugar cookie dough pressed into a pan as the crust, providing a buttery and soft base. The topping is a whipped blend of softened cream cheese, sugar, egg, and coconut extract to add flavor, complemented by bright lime zest and shredded sweetened coconut for texture and aroma. Baking sets the topping firmly while toasting the coconut, creating a golden finish.

The bars are baked for about 20 minutes until the topping is set and coconut toasted, then cooled and refrigerated until fully chilled. Once cold, the bars can be cut into squares that combine the smooth cream cheese layer with a tender, slightly crunchy coconut topping and a soft cookie crust beneath.

These bars make a suitable dessert or snack that hold their shape well when chilled. The lime zest adds a subtle freshness that balances the richness of the cream cheese and sweetness of the coconut.
