Coconut Cherry Popsicles with Dark Chocolate and Crushed Almonds
Description
This recipe starts by pitting cherries and blending them with coconut milk, regular milk, maple syrup, and almond extract until smooth. The mixture is poured into molds and frozen solid to create creamy, fruit-forward popsicles with subtle coconut flavor and natural cherry sweetness.
For serving, the popsicles are removed from molds, dipped in melted dark chocolate, and sprinkled with finely chopped mixed nuts, such as almonds, to add crunch and a rich, bittersweet contrast to the creamy, fruity base.

Ingredients
- 250 g Cherry
- 200 ml coconut milk (half a 400ml/15oz can)
- 100 ml milk
- 2 tablespoon maple syrup
- ½ teaspoon almond extract optional
To serve
- 100 g dark chocolate , chopped
- 50 g mixed nuts finely chopped
Instructions
- Remove the cherry pits with a knife or cherry pitter.
- In a blender or food processor, blitz the cherries, coconut milk, milk and almond extract until completely smooth. Pour into ice lolly moulds and freeze until solid.
- To serve, melt the chocolate and set aside. Remove the cherry popsicles from the mould and drizzle the tips with the melted chocolate, then sprinkle with the chopped almonds. Enjoy!
