Crust

  • 1/2 cup butter room temperature, unsalted
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour

Filling

  • 2 egg
  • 1 cup brown sugar packed
  • 1 cup pecans chopped
  • 1 cup sweetened flaked coconut
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

Prepare the crust.

  1. Preheat the oven to 350 F. Line an 8 x 8 or 9 x 9 pan with parchment, then spray with non-stick spray.
  2. Mix the crust ingredients, then press into the prepared pan. Bake for 10 minutes until starting to turn golden.

Prepare the filling

  1. Beat the eggs slightly.
  2. Mix in remaining ingredients.
  3. Spread over the crust. (Mine was still warm)
  4. Bake for an additional 20-25 minutes until golden.
  5. Allow to cool completely in the tin, then use parchment to pull out the cookies for cutting.
