Description
Coconut Dream Bars start with a simple crust made from unsalted butter, brown sugar, and flour pressed into a pan and partially baked until golden. The filling combines eggs, packed brown sugar, chopped pecans, sweetened flaked coconut, flour, baking powder, and salt. This mixture is spread over the warm crust and baked again to form a firm, chewy topping.
The bars feature a balance of sweetness and nutty crunch, with coconut adding texture and flavor depth. Baking the filling on the warm crust helps meld the ingredients and creates a golden finish.
Once cooled, bars are removed from the pan for easy cutting. They make a convenient dessert or snack, offering a blend of crisp edges and a moist interior.
Ingredients
Crust
- 1/2 cup butter room temperature, unsalted
- 1/2 cup brown sugar
- 1 cup all-purpose flour
Filling
- 2 egg
- 1 cup brown sugar packed
- 1 cup pecans chopped
- 1 cup sweetened flaked coconut
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
Prepare the crust.
- Preheat the oven to 350 F. Line an 8 x 8 or 9 x 9 pan with parchment, then spray with non-stick spray.
- Mix the crust ingredients, then press into the prepared pan. Bake for 10 minutes until starting to turn golden.
Prepare the filling
- Beat the eggs slightly.
- Mix in remaining ingredients.
- Spread over the crust. (Mine was still warm)
- Bake for an additional 20-25 minutes until golden.
- Allow to cool completely in the tin, then use parchment to pull out the cookies for cutting.
