Coconut Frosting

Coconut Frosting blends unsalted butter with powdered sugar, coconut cream, and a touch of coconut extract to create a rich, creamy icing with a delicate coconut flavor. The frosting is smooth and spreadable, ideal for topping cakes or cupcakes, and it holds its shape well when piped.

Description

This Coconut Frosting recipe starts by beating unsalted butter until light and fluffy. Powdered sugar is added gradually, thickening the mixture to a dense consistency. Coconut extract enhances the flavor, while coconut cream is incorporated in small amounts to achieve a soft yet stable frosting texture. A pinch of salt balances the sweetness and rounds the flavor profile.

The resulting frosting offers a smooth and creamy texture with a pronounced but not overpowering coconut taste. It is suitable for spreading or piping onto cakes and cupcakes and can provide both flavor and decorative appeal.

This frosting recipe yields enough to cover a 9-inch layer cake. It keeps well refrigerated for up to one week, allowing flexibility to prepare ahead or store leftovers.

Ingredients

Servings
  • 1 ½ cups butter room temperature, unsalted
  • 6 cups powdered sugar
  • 6 tablespoons coconut cream more as needed, unsweetened
  • ½ teaspoon coconut extract
  • 1 pinch salt to taste

Instructions

  1. Place butter in a large bowl and beat with an electric mixer until light and fluffy, 2-3 minutes.
  2. Add sugar, one cup at a time, and beat until combined -- it will be thick. Beat in coconut extract.
  3. Add coconut cream (ensure it is well stirred), a little at a time, and beat on high speed until light and fluffy. Continue adding the coconut cream until desired texture and firmness is reached.
  4. Add a pinch of salt (to your tastes) and beat until combined.
  5. Spread or pipe onto cake or cupcakes.

Notes

  • This amount of frosting is sufficient to cover a 9-inch layer cake.
  • Store coconut frosting in the refrigerator for up to one week for best freshness.
