  • 1 cup white Basmati rice
  • 2 cups coconut milk full fat
  • 1 cup water or chicken stock
  • ½ lime juiced, or more
  • 1 pinch salt optional

Instructions

  1. Rinse and drain rice in cold water. This removes starch and any dust on the rice.
  2. Next, place the rice in a saucepan or small pot with the water and coconut milk on high heat. Add lime zest if you'd like a stronger lime flavour.
  3. Bring the pot to a boil. Stir and reduce the heat to low heat. Cover partially with a lid.
  4. Cook for 10-12 minutes, or until it appears all the liquid has been absorbed into the rice, before taking the pot off the heat and letting it rest for 10 minutes.
  5. Fluff the coconut lime rice and stir in the lime juice before serving.
