Description
Coconut Lime Rice uses white Basmati rice simmered in a mixture of full-fat coconut milk and water or chicken stock, infused with fresh lime juice for a subtle citrus aroma. The rice is rinsed thoroughly to remove starch, preventing clumping and resulting in light, fluffy grains. Cooking on low heat with a partially covered lid allows the liquid to absorb completely without overcooking the rice.
The finished dish offers a creamy yet fluffy texture with the richness of coconut milk balanced by the tartness of lime juice, making it mild but flavorful. Its smooth texture contrasts nicely with grilled, roasted, or spicy dishes. For extra lime aroma, zest can be added during cooking before finishing with fresh lime juice stirred in at the end.

Ingredients
- 1 cup white Basmati rice
- 2 cups coconut milk full fat
- 1 cup water or chicken stock
- ½ lime juiced, or more
- 1 pinch salt optional
Instructions
- Rinse and drain rice in cold water. This removes starch and any dust on the rice.
- Next, place the rice in a saucepan or small pot with the water and coconut milk on high heat. Add lime zest if you'd like a stronger lime flavour.
- Bring the pot to a boil. Stir and reduce the heat to low heat. Cover partially with a lid.
- Cook for 10-12 minutes, or until it appears all the liquid has been absorbed into the rice, before taking the pot off the heat and letting it rest for 10 minutes.
- Fluff the coconut lime rice and stir in the lime juice before serving.
