Description

The Coconut Macaroons recipe starts by combining egg whites, granulated sugar, and sweetened shredded coconut in a saucepan over medium-low heat. Frequent stirring warms the mixture until it becomes sticky and cohesive, which takes about 12-15 minutes. Removing from heat, almond and vanilla extracts are stirred in to impart fragrant flavors.

After chilling the mixture in the refrigerator for about 30 minutes, tablespoon-sized portions are scooped onto a lined baking sheet. Baking at a low temperature of 300 degrees Fahrenheit for 27-30 minutes gently dries the exterior without browning too quickly, producing golden macaroons with a chewy texture inside.

  • 3/4 cup egg from 5 large eggs, white
  • 2/3 cup granulated sugar
  • 10 oz sweetened coconut flakes (Baker's (about 3 1/3 cups))
  • 1/2 tsp almond extract
  • 1/4 tsp vanilla extract
  • pinch salt

Instructions

  1. In a heavy saucepan combine egg whites, sugar and coconut flakes and cook over medium-low heat, stirring frequently until all the ingredients combine together, about 12-15 minutes.
  2. The mixture should be sticky and moist, not dry.
  3. Remove from heat and stir in the almond and vanilla extracts. Set aside on a dish and let it cool in the refrigerator about 30 minutes.
  4. Preheat the oven to 300F°.
  5. Using a tablespoon, scoop tightly packed tablespoonfuls onto a baking sheet covered with a silpat or parchment paper.
  6. Bake 27-30 minutes or until golden.
