Coconut Oatmeal Cookie Balls (No-Bake)

Coconut Oatmeal Cookie Balls blend oats with a rich, no-bake chocolate-peanut butter mixture. Melted coconut oil combined with peanut butter, cocoa, and a hint of vanilla coats rolled oats, which are then shaped into cooled balls. The no-bake method avoids traditional baking, resulting in chewy, chocolaty bites that are easy to prepare and store chilled for a firm texture.

Description

This no-bake recipe begins by heating a mixture of sugar, melted coconut oil, creamy peanut butter, almond milk, cocoa powder, salt, and vanilla extract until it reaches a rolling boil. This ensures the ingredients combine thoroughly and the sugar dissolves completely. Once removed from heat, rolled oats are stirred in to coat every oat grain. The mixture is spooned into tablespoon-sized balls and cooled on parchment paper to set. Chilling enhances their texture, making them denser and easier to handle. This method yields a chewy, chocolaty snack or dessert that's ready without oven use.

Ingredients

Servings
  • 1 ½ cups granulated sugar
  • ½ cup coconut oil melted
  • ½ cup peanut butter creamy
  • ½ cup almond milk
  • ¼ cup cocoa powder
  • 1 tsp salt fine
  • 1 tsp vanilla extract pure
  • 3 cups rolled oats old-fashioned

Instructions

  1. In a saucepan set over medium heat, stir together the sugar, coconut oil, peanut butter, almond milk, cocoa powder, salt, and vanilla. Stir to combine well. Continue to stir on medium heat until mixture comes to a rolling boil (bubbling all over the surface.) Let boil this way for 4 minutes, stirring constantly and scraping sides. Immediately remove saucepan from heat once your 4 minutes are up. Add vanilla (be careful, mixture will bubble up again) and stir well. Stir in the oats to thoroughly coat.
  2. Carefully scoop mixture into heaping tablespoons; place cookie balls on parchment or wax paper to cool completely. If the mixture is very thick, you may need to help shape the cookie balls with hands, so wait until it's not too hot to touch. Rinse hands with water every once in awhile for ease of ball-shaping.
  3. Cool completely at room temp or better yet, cover and chill in fridge and eat them straight from the fridge! They're most delicious when chilled.
