Coconut Popsicles

Coconut Popsicles blend full-fat canned coconut milk with vanilla and sugar to create a creamy frozen treat. The recipe uses heating to dissolve sugar and infuse vanilla before chilling and freezing into popsicles. The result is a lightly sweet and smooth textured dessert that highlights the natural richness of coconut. It is important to use regular canned coconut milk for texture and flavor. These popsicles are a refreshing choice for warm days and can be easily made in molds or cups.

Description

Coconut Popsicles rely on full-fat canned coconut milk, providing a creamy base with coconut's natural richness. The recipe calls for gently warming the coconut milk with a vanilla bean or extract, sugar, and salt to dissolve the sugar and infuse flavor before steeping to deepen the vanilla notes. After removing the vanilla bean, the mixture is portioned into popsicle molds or suitable cups and frozen until firm. The subtle sweetness is balanced to compensate for flavor muting from freezing, ensuring a smooth and pleasant taste. No low-fat substitutes should be used, as the full-fat milk provides the necessary creaminess and texture. These popsicles offer a dairy-free, vegan-friendly frozen dessert option that can be made ahead and customized with your preferred vanilla form.

Ingredients

Servings
  • One (13.5-ounce) coconut milk do NOT substitute low-fat coconut milk, full-fat, canned
  • 1/2 vanilla bean split lengthwise and seeds scraped (or substitute 1 teaspoon vanilla extract)
  • 2 1/2 to 4 tablespoons granulated sugar to taste
  • 1 pinch salt

Instructions

  1. In a small saucepan over medium heat, whisk together the coconut milk, vanilla bean and seeds, sugar, and salt. Cook, stirring occasionally, until the sugar has dissolved and the mixture just barely begins to bubble. Don't let it boil.
  2. Remove the pan from the heat, cover, and let steep for at least 1 hour.
  3. Remove the vanilla pod and discard. Whisk the coconut milk mixture to recombine and dump it into a large measuring cup for easy pouring.☞ TESTER TIP: If you sneak some of the unfrozen mixture (c'mon, we know you do!), it should seem a touch on the sweet side. Cold mutes flavor. So what may seem too sweet while the mixture is warm will end up tasting a lot less so after being frozen.
  4. Divvy the coconut milk mixture evenly among 6 popsicle molds (or substitute coffee mugs or paper cups). Freeze until firm, at least 2 hours or up to overnight (or, if using mugs or cups, insert a wooden stick after about 45 minutes or so).
  5. We think you know what to do from here.

Notes

  • Use full-fat canned coconut milk to achieve the ideal creamy texture; low-fat varieties are not suitable.
  • The mixture is best steeped for at least 1 hour to allow the vanilla flavors to develop fully.
  • If using cups instead of molds, insert sticks about 45 minutes after placing the mixture in the freezer to ensure they stand upright.
  • Adjust sugar based on preference, keeping in mind that the cold freezes flavor intensity.
  • Consider doubling the recipe for larger popsicle molds to have enough mixture.
