Coconut Protein Balls

These no-bake coconut protein balls are fudgy and packed with protein! They are sugar-free and low-carb, and ready in just 10 minutes!

  • ½ ½ cup heavy whipping cream or coconut cream
  • 4 4 tablespoons unsalted butter or coconut oil, melted
  • 3 3 scoops protein powder see notes below for options
  • ½ ½ cup powdered sweetener  or as needed, see notes
  • ½ ½ cup coconut flour
  • ¾ ¾ cup unsweetened shredded coconut plus extra for rolling
  • 1 1 teaspoon vanilla extract optional
  • low-carb milk (optional) add as needed, to adjust texture

Instructions

  1. Add in food processor bowl (or a large bowl if making by hand) all ingredients in this order: 1/2 cup heavy whipping cream, 4 tablespoons unsalted butter, 3 scoops protein powder, 1/2 cup powdered sweetener, 1/2 cup coconut flour, 3/4 cup unsweetened shredded coconut and 1 teaspoon vanilla extract (if using).
  2. Mix ingredients until combined into a smooth and firm dough. In a good food processor it takes 15-20 seconds. Check the texture of the dough, if it's too soft to shape add more protein powder or coconut flour, if it's too firm to roll or too dry, add a little low-carb milk, about half a tablespoon at a time, and mix to combine.
  3. Break the dough into 16 parts and roll by hand to make ping-pong ball size truffles. Or press the dough into a baking pan lined with parchment paper, refrigerate for 2 hours and slice into bars.
  4. You can roll the coconut protein balls in shredded coconut for a "snowy" effect.

Notes

  • Protein flavors: I use unflavored protein, but any flavor that pairs well with coconut works, like chocolate or vanilla! If using flavored protein, omit sweetener and vanilla extract. Taste the dough and adjust sweetness if needed before shaping the balls.
  • Plant-based protein: Choose the flavored options if using plant proteins like pea or hemp. The unflavored versions don't taste so good in this recipe.
  • Sugar-substitute: Use a powdered version of your preferred keto sweetener, as the granulated sweeteners won't dissolve and the protein balls will taste sandy. You can add more sweetener as needed for a sweeter treat.
