Description
This Coconut Rice begins with rinsed jasmine rice simmered gently with coconut milk and water, complemented by fresh ginger slices and optionally a cinnamon stick for aromatic complexity. The coconut milk enriches the rice with creaminess and a mild sweetness while the ginger adds a subtle warmth.
The mixture is cooked over low heat until the liquid is fully absorbed. After cooking, the ginger and cinnamon are removed, and the rice is fluffed to separate grains. The final texture is tender and slightly creamy with an inviting fragrance from the coconut and spices.
Coconut Rice pairs well as a side to many savory dishes, especially those with bold or spicy flavors, where its mild sweetness can balance the palate. For different textures and intensities, brown jasmine rice can be used, but it requires longer cooking and yields a subtler coconut flavor.
Ingredients
- 1 cup white jasmine rice uncooked
- 1 cup coconut milk
- 1 cup water
- 1/2 teaspoon salt
- 3 lices ginger root
- 1 cinnamon stick optional
Instructions
- Rinse the rice until water runs clear.
- Add all ingredients to a medium saucepan, stir to combine. Bring to a boil, cover and reduce heat to low. Simmer until liquid is absorbed, 15-20 minutes.
- Remove the ginger slices and cinnamon stick, fluff rice with a fork and serve.
Notes
- Brown jasmine rice can be substituted for white; adjust cooking time according to package instructions.
- Coconut flavor is more pronounced with white jasmine rice than with brown.
