Cinnamon filling

  • 1 cup light brown sugar
  • ¼ cup all-purpose flour
  • 1 tablespoon ground cinnamon

For the streusel

  • ½ cup butter melted, unsalted
  • cup brown sugar packed
  • cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup all-purpose flour

For the cake

  • 3 ¾ cups all-purpose flour
  • 3 tablespoons cornstarch
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cup butter softened, unsalted
  • ¾ cup light brown sugar
  • 1 ½ cups granulated sugar
  • 3 egg large
  • 2 teaspoons vanilla extract
  • 1 ½ cups sour cream

Instructions

For the cinnamon filling:

  1. In a small mixing bowl, combine the brown sugar, flour, and cinnamon with a whisk until completely combined. Set aside.

For the Streusel:

  1. Add all the streusel topping ingredients to a small mixing bowl, and mix with a fork until well combined. Set aside.

For the cake:

  1. Preheat the oven to 350 degrees F. Prepare a 9x13 inch baking dish with parchment paper and cooking spray. Set aside.
  2. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a separate large mixing bowl with a hand mixer, beat the butter, brown sugar, and granulated sugar until light and fluffy. Add the eggs, vanilla, and sour cream. Mix until combined.
  4. Add the dry mixture to the wet and mix until combined, scraping the sides of the bowl with a spatula as needed.

To assemble:

  1. Pour half the cake batter into the prepared baking dish and smooth out with a spatula.Evenly distribute the cinnamon filling over top. Spread the remaining batter over the cinnamon filling. Sprinkle the streusel on top.
  2. Bake for 50-55 minutes or until a toothpick can be inserted and come out clean.
  3. Allow the cake to cool for 20 minutes before cutting.
