Coffee Cake Muffins
Description
This recipe mixes all-purpose flour with brown and white sugar, baking powder, baking soda, cinnamon, and salt to build a spiced muffin base. Wet ingredients include milk, canola oil, and eggs, which are combined gently to create a moist batter. The batter is portioned into lined or greased muffin cups.
The crumb topping combines sugars, cinnamon, salt, melted butter, and flour, mixed until moist and sprinkled generously over each muffin before baking. This topping gives a slightly crunchy and spiced texture that contrasts with the soft muffin interior.
After baking at 375°F for 15 to 17 minutes, the muffins are cooled briefly and then drizzled with a simple glaze made from confectioners' sugar, vanilla, and milk. The glaze adds sweetness and a delicate finish. These muffins offer a classic flavor profile suitable for breakfast or a snack alongside coffee.
No additional notes were provided, but following the suggested baking times and mixing methods will ensure the muffins bake through evenly with the desired topping texture.

- In a large glass measuring cup or another bowl, whisk together milk, canola oil and eggs. Pour mixture over dry ingredients and stir using a rubber spatula just until moist.
- Scoop the batter evenly into the muffin tray. Sprinkle with crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean.
- When the muffins are done, cool for 10 minutes and drizzle the glaze on each muffin.
- Allow glaze to set before serving.
