Colcannon Recipe

Colcannon is a hearty dish made by combining mashed potatoes with sautéed cabbage, onions, garlic, and crispy bacon. The potatoes are creamy and buttery, while the cabbage mix adds a tender, savory element infused with herbs and lemon juice. Topped with additional bacon and green onions, this dish offers a comforting side with layered flavors and textures.

Description

This Colcannon recipe starts with peeled, quartered potatoes boiled until fork-tender, then mashed with heavy cream and butter to a smooth consistency. Separately, bacon is cooked crisp, and its drippings are used to sauté diced onions, minced garlic, and chopped cabbage seasoned with oregano, Italian herbs, salt, pepper, and a splash of lemon juice. Once the cabbage softens, it is folded into the mashed potatoes along with chopped crispy bacon.

The combination yields a creamy, flavorful potato mash punctuated by tender cabbage and smoky bacon pieces. The dish is finished with melted butter, extra chopped bacon, and green onions on top, enhancing the richness and adding fresh color.

Colcannon serves as a warming side suitable for comforting meals, complementing roasted meats or as part of traditional Irish meals. The interplay of creamy, crispy, and tangy elements makes it satisfying and balanced.
