Description
The recipe begins by steeping coarsely ground coffee in filtered water for 12 hours to create cold brew coffee, either with a French press or by straining through filters. The cold brew is combined with sweetened condensed milk to create a sweet, creamy coffee base.
Popsicle molds are prepared by placing a tablespoon of dark chocolate chips at the bottom, then filled with the coffee and condensed milk mixture. They are covered, fitted with sticks, and frozen until completely solid. The chocolate chips provide rich bursts of dark flavor once frozen inside the coffee mixture.
To unmold, briefly dipping the molds in hot water loosens the popsicles without melting them excessively. These coffee pops are a refreshing, caffeinated dessert or snack especially suited for warm weather or after meals.
Notes suggest substituting decaf coffee if desired, varying the sweetness or creaminess with different creamers instead of condensed milk, or adding coffee liqueurs like Kahlua for an adult version. If popsicle molds are unavailable, paper cups can be used, peeling the cup away to enjoy the pop.

- 1/4 cup sweetened condensed milk or more to taste
- 8 Tbsp dark chocolate chips

- To make the cold brewed coffee Put 1/2 cup of coarsely ground coffee into a French press coffee pot or large jar. Add 2 cups filtered water and stir. Cover and let sit for 12 hours. Then depress the plunger in the French press, or strain the coffee through cheesecloth or coffee filters.
- Put 1 tablespoon of chocolate chips in the bottom of 8 popsicles molds. Mix the condensed milk with the coffee, and fill each mold to the top.
- Cover top of mold tightly with foil and insert the sticks. Freeze until solid.
- To remove the popsicles, fill the sink with hot tap water and immerse the mold up to, but not over, the top lip for a few seconds and pull out the pops. If they still won't budge, immerse for a few seconds longer. Don't leave the mold in the hot water too long or the popsicles will start to melt!
Notes
- Decaf coffee can be used for a non-caffeinated version.
- Any coffee creamer can replace condensed milk depending on preferred sweetness and creaminess.
- Adding liqueur such as Kahlua creates an adult dessert variation.
- Popsicles can be made in paper cups if molds are not available; simply peel the cup to eat.
