  • 1 duck breast fully cooked, smoked
  • 2 bundles green tea noodles 160g
  • mixed greens handful, fresh
  • edamame boiled and shelled
  • cherry tomatoes or grape tomatoes
  • 2-3 tablespoon ponzu sauce or to taste

Instructions

Prepare the noodles:

  1. Cook the green tea noodles according to the package directions.
  2. Drain the noodles and rinse under cold water. Set aside.

For the duck:

  1. Sear the duck in a hot pan for approximately 5 minutes per side, until a crust has formed.
  2. Remove from heat and let it rest on a cutting board for 5 minutes.
  3. Use a sharp serrated knife to cut into slices.

Assemble:

  1. Add fresh mixed greens to serving bowl.
  2. Portion the cooked green tea noodles into the bowl.
  3. Lay slices of duck over the noodles.
  4. Add a few edamame and cherry/grape tomatoes.
  5. Pour ponzu sauce over the duck and noodles.
