Cold Duck Noodle Salad
Description
Cold Duck Noodle Salad features fully cooked smoked duck breast that is seared to develop a flavorful crust and then sliced thinly to showcase its richness. Green tea noodles bring a delicate herbal aroma and smooth texture once cooked and cooled under cold water to prevent stickiness. Fresh mixed greens add a crisp, leafy contrast, while edamame beans contribute a tender bite and mild sweetness. Cherry tomatoes introduce juicy bursts of flavor.
The salad is dressed simply with ponzu sauce, a citrus-based soy sauce, which adds a bright, slightly tangy seasoning that complements the smoky duck and fresh vegetables. The ingredients are combined gently to maintain distinct textures and flavors.
This dish can be served as a refreshing light meal or lunch, balancing protein and vegetables in a colorful presentation. The cold preparation makes it suitable for warmer days or as a make-ahead option.
