Cold Sesame Noodles with Butter Pepper Shrimp

Ingredients

  • 1 roll soba noodles Japanese buckwheat noodles, about 3 oz. (85 g
  • water for boiling
  • 1/4 carrot peeled and cut into matchstick strips, small
  • 1/4 cucumber sliced and cut into matchstick strips, small
  • white sesame seed
  • black sesame seed
  • 3 Shrimp peeled and deveined, medium-sized
  • 1 pinch salt
  • 3 black pepper dashes
  • butter

Dressing:

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons peanut butter
  • 1 1/2 tablespoons sugar
  • 1 tablespoon soba tsuyu sauce soba noodles dipping sauce

Instructions

  1. Bring a small pot of water to a boil. Cook the soba according to the package instructions, or until the soba is al dente. Rinse with cold water, drain, and set aside in a bowl.
  2. Heat a small saucepan and add all the ingredients for the dressing to the pan. Turn the heat to low and stir to combine well. Let cool.
  3. Combine the dressing, soba noodles, carrot, cucumber, and sesame seeds. Toss well and chill in the refrigerator for about 20 minutes.
  4. Season the shrimp with salt and black pepper. Heat a sauté pan and add some butter. When the butter melts, add the shrimp to the pan and cook until both sides are nicely browned.
  5. Top the cold sesame noodles with shrimp and serve immediately.
