Concord Grape Frozen Yogurt

Concord Grape Frozen Yogurt blends pureed Concord grapes strained to remove skins and seeds with yogurt and honey, then churned and frozen into a smooth, creamy dessert. The result offers the bright, fruity essence of concord grapes balanced by the creaminess of yogurt and sweetness from honey.

Description

This frozen yogurt begins by processing fresh Concord grapes to a puree and then straining out skins and seeds for a smooth grape base. Combining this grape puree with yogurt and honey creates a well-balanced mixture of tartness, sweetness, and creaminess.

Chilling the mixture before processing in an ice cream machine ensures proper texture development. Once churned, the frozen yogurt is firmed by freezing it in a loaf pan for several hours. The end result is a creamy and refreshing frozen treat infused with natural grape flavors.

The use of Concord grapes provides a distinctive flavor profile, different from other common fruit frozen yogurts. The recipe allows flexibility in the type of yogurt used and highlights the fresh fruit's natural sweetness and color without additional flavoring.

Ingredients

Servings
  • 1 pound grapes seeded or seedless, it doesn't matter, Concord
  • 2 cups yogurt any kind, I used full fat Greek, plain, Greek
  • 2 Tbsp honey

Instructions

  1. Remove the grapes from the stems and put them in the bowl of a food processor fitted with the blade attachment. Puree the grapes until smooth, scrape down the bowl as necessary.
  2. Push the puree through a mesh strainer, cheesecloth, or a nut milk bag. Try to get as much of the puree liquid through, leaving just the skins and any seeds behind.
  3. Blend the yogurt with the strained puree and the honey until smooth. It might help to put it back into the (rinsed) food processor to do this.
  4. For best results chill this mixture for at least 2 hours before proceeding.
  5. Pour the chilled mixture into your ice cream machine and process according to directions.
  6. Spread the frozen yogurt into a loaf pan, cover, and put in the freezer for several hours or until firm enough to scoop.
