Cooked Lettuce with Oyster Sauce & Garlic

This Cooked Lettuce recipe features romaine leaves lightly wilted in boiling water before being drenched in a garlicky oyster sauce blend. The quick cooking preserves the lettuce’s crispness while infusing it with a savory, slightly sweet sauce that highlights garlic, soy, and oyster sauce flavors.

Description

Cooked Lettuce with Oyster Sauce & Garlic uses whole romaine leaves that are washed thoroughly, especially at the stems where dirt can accumulate. The leaves are quickly boiled with oil to soften them slightly without losing their structure. Meanwhile, garlic is gently cooked with soy sauce, oyster sauce, and water to create a flavorful sauce that is poured over the hot lettuce immediately after cooking.

The result is a warm vegetable side dish with tender leaves carrying a rich umami sauce, combining sweetness and saltiness from the oyster and soy sauces balanced by fresh garlic. The method ensures the lettuce stays intact yet tender enough to absorb the sauce well.

This dish pairs well alongside main courses and adds a green vegetable element with boosted flavor. Serving immediately preserves the lettuce’s texture and the sauce’s brightness.

Ingredients

Servings
  • 10 ounces romaine lettuce
  • 3 tablespoons vegetable oil
  • 4 cloves garlic (minced, about 2 tablespoons)
  • 1 tablespoon soy sauce or to taste, light
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce)
  • 3 tablespoons water

Instructions

  1. Separate the romaine into individual leaves. Wash the leaves clean, paying special attention to the base of the stems, which hold the most dirt! Drain, leaving the leaves whole.
  2. Bring a pot of water to a boil.
  3. Meanwhile, in a small saucepan over medium heat, heat 2 tablespoons of oil. Add the minced garlic, light soy sauce, oyster sauce and 3 tablespoons of water. Bring the mixture to a simmer, and then turn off the heat. Set aside.
  4. When your water is boiling, add the remaining 1 tablespoon of oil, along with the romaine lettuce leaves. Cook for about 20 seconds, to lightly wilt the lettuce. Immediately scoop them out of the pot. Drain off any excess water, and lay them on a serving plate
  5. Pour the sauce over the top, and serve immediately.
