Description
Cookie Cheesecake Parfait with Berries consists of a smooth cheesecake mixture made by beating room-temperature cream cheese, plain Greek yogurt, maple syrup, and vanilla extract until creamy. The addition of Greek yogurt adds a mild tang to complement the sweetness of the maple syrup and cream cheese.
Cookies are broken into a mixture of chunks and crumbs to provide varied texture layers within the parfait. These alternate with spoonfuls of cheesecake filling and mixed berries, which can be frozen and serve to add bursts of fruity flavor and moisture once thawed slightly. The dessert is assembled in serving glasses or jars and topped with cookie crumbles, more berries, and a sprig of fresh mint.

Ingredients
- 6 cookies You can use any cookies that you like, but I used double chocolate chip
For the cheesecake filling:
- 8 oz cream cheese at room temperature, soft, 250g
- 1 cup Greek yogurt plain, 200g
- 3 tablespoon maple syrup
- ¼ teaspoon vanilla extract
- 2 handfuls mixed berries frozen
- 1 prig mint fresh
Instructions
- Roughly break up the cookies so it is a mix of small chunks and cookie dust.
- In a stand mixer or with an electric mixer, beat the cream cheese, yogurt, maple syrup and vanilla until smooth and creamy.
- Layer the crumbled cookies (save some for garnish), cheesecake mixture and berries, alternating, in glasses or jars. Top with the remaining cookie crumbles, berries and a sprig of mint. Refrigerate for at least 1 hour and serve chilled.
