Description

This recipe makes Cookie Dough Bites by first heat-treating all-purpose or gluten-free flour to eliminate harmful bacteria. The flour is mixed with softened butter, light brown sugar, granulated sugar, milk, vanilla extract, and a pinch of sea salt. Mini chocolate chips are folded in last, adding bursts of chocolate in each bite.

The dough is rolled into small balls, which can be eaten right away or refrigerated to firm up. These treat-sized sweets capture the essence of cookie dough without baking. Regular-sized chocolate chips can be used as an alternative to minis.

Cookies store well in the refrigerator for up to one week and freeze nicely for longer storage, making them convenient for make-ahead snacking or sharing.

  • 1 cup flour gluten free 1 to 1 flour or all purpose flour
  • ½ cup butter room temperature
  • ½ cup light brown sugar tightly packed
  • 2 tbsp granulated sugar
  • 1 tbsp milk
  • ½ tsp vanilla extract
  • pinch salt sea salt
  • cup mini chocolate chips

Instructions

  1. First, heat treat the flour. Spread flour onto a parchment lined baking pan. Bake at 350 degrees Fahrenheit for 5 to 7 minutes.
  2. In a stand mixer, beat butter, granulated sugar and brown sugar for 2 minutes or until no clumps of butter remain.
  3. Add in heat treated flour, milk, vanilla and sea salt. Stir until combined.
  4. Next, fold in mini chocolate chips.
  5. Roll dough between hands into bite sized balls.
  6. Finally, serve immediately or refrigerate.

Notes

  • Both gluten-free 1:1 flour and all-purpose flour are suitable for this recipe.
  • Heat treat the flour by baking it briefly to ensure safety for raw consumption.
  • Beat butter and sugars thoroughly to remove clumps for smooth dough.
  • Regular chocolate chips can be used instead of mini chips.
