Cookie For One!

This single-serving cookie recipe mixes butter, brown sugar, vanilla, flour, baking soda, salt, oats, and chocolate chips into a small dough ball baked at 350°F. The cookie can be enjoyed warm for a soft, gooey texture or cooled for a crispier bite. It’s a quick treat designed for one portion without leftovers.

Description

The Cookie For One! recipe calls for blending room temperature butter and light brown sugar with vanilla, then incorporating flour, baking soda, salt, and rolled oats to create a small dough ball enriched with chocolate chips. The dough is formed into a smooth round shape, pressed slightly, and topped with extra chocolate chips before baking. Baking at 350°F for 12-15 minutes yields a cookie with a golden exterior and soft interior. Heating time can be adjusted to preference for texture—shorter for a gooey center or longer for a crunchier finish.

This recipe is intended as a quick, single portion dessert or snack, eliminating the need for storing or sharing. The inclusion of oats adds a slight chewiness and texture contrast to the otherwise soft cookie. Rolling and slightly flattening the dough ensures even baking and a balanced thickness.

Optimal enjoyment depends on serving warm if a soft and gooey cookie is desired or allowing it to cool completely to develop a firmer structure. This versatility offers a personalized eating experience based on temperature and texture preference.

Ingredients

Servings
  • 1 Tbsp butter room temp is best but not essential, unsalted
  • 1 Tbsp brown sugar light; firmly packed
  • 1/4 tsp vanilla bean paste or vanilla extract
  • 2 Tbsp flour fluff, scoop, and level
  • 1/8 tsp baking soda
  • pinch salt
  • 1 tsp rolled oats old fashioned or quick cooking
  • 1 Tbsp chocolate chips plus a few extra for the top

Instructions

  1. Set oven to 350F
  2. Put the butter, sugar, and vanilla in a small bowl, or mug. Use a fork to blend them together really well.
  3. Add the flour, baking soda, salt, and oats and continue to mix until everything is well blended and there is no dry flour left.
  4. Stir in the chocolate chips and bring the dough together with your hands and roll into a smooth round ball.
  5. Set on a cookie sheet, you can line with a piece of parchment if you want, but it's not necessary. Flatten just slightly with your fingers, and pop in a couple of extra chips on tip. Push them in well but keep that nice round shape.
  6. Bake for 12-15 minutes
  7. If you like your cookie soft and gooey, eat it warm from the oven. If you like your cookie with a little bit of crunch, let it cool completely.

Notes

  • For a soft and gooey cookie, consume it warm directly from the oven.
  • Allow the cookie to cool completely for a firmer, crunchier texture.
