Cookie Monster Cupcakes

C is for Cookie Monster Cupcakes! These adorable Sesame Street cupcakes are perfect for a Cookie Monster party or just a fun and easy treat to make the kids.

Ingredients

CupcakeS:

  • 1/3 cup butter softened, unsalted
  • 1 cup sugar
  • 1 large egg
  • 2 cups flour
  • 1/2 tsp salt sea salt
  • 2 1/2 tsp baking powder
  • 3/4 cup milk whole
  • 1 tsp vanilla extract pure
  • 3 Tablespoon canola oil
  • 1 cup mini chocolate chips
  • 1/2 cup Oreo cookies crushed

Frosting:

  • 1 cup butter softened, unsalted
  • 2 1/2 cups powdered sugar
  • 1 tsp vanilla
  • 3-5 Tablespoons heavy whipping cream
  • royal blue food coloring
  • 1 container of larger edible eyes
  • 1 mini chocolate chip cookies

Instructions

Cupcakes:

  1. Preheat the oven to 350 degrees. Line cupcake pan with cupcake liners.
  2. Using a standing mixer, cream together the butter and sugar until light and fluffy.
  3. Add the egg and mix until combined.
  4. In a large bowl mix together the flour, salt and baking powder.
  5. In a medium bowl, mix together the milk, vanilla and oil.
  6. Gradually add the dry ingredients, alternating with the milk mixture. Mixing until combined after each add in.
  7. Fold in the chocolate chips and crushed Oreos.
  8. Fill the cupcake liners 2/3 full and bake for 21 minutes or until a toothpick comes out clean

Frosting:

  1. Using a stand mixer, combine all ingredients and mix on medium speed.
  2. Mix in a few drops of the blue coloring.
  3. If the blue is to light for cookie monster add in a few more drops. Be sure to scrape down the sides of the bowl.
  4. Mix until you see stiffed peaks in your frosting.
  5. Spoon the frosting into the piping bag and frost the cooled cupcakes.
  6. Carefully place two candy eyes onto the top of the frosting.
  7. Using a sharp knife, cut the chocolate chip cookie in half.
  8. Place the cookie into the bottom corner of the frosting where his mouth would be.
